100% Cabernet Sauvignon (Clones 4 and 6, all organically grown) fermented in temperature-controlled stainless-steel tanks with pump-overs and aged 24 months in a mix of mostly American oak barrels (a few French oak barrels, 75% new). Deep, dense, purple-red with well formed legs. Stains the glass. Dry, full-bodied with balanced acidity; and medium-chewy phenolics. Big, juicy, more-black-than-red-fruit Cabernet Sauvignon with a big mouth feel. Blackberry and black cherry with dusty oak and tobacco, pencil shavings, and a bit of spice. Absolutely delicious.
